I have a list of things I'd like to do in my life. One of them is to cook every single recipe in a cookbook. I chose to cook my way through Rick Bayless' Everyday Mexican. This series is a record of that adventure.

Originally I chose to make this recipe because I needed the salsa for another recipe I was attempting later in the week, but it turned out to be a winner all on it's own. First you get a load of tomatillos and roast them till they are a little black and sticky, this makes them sweetish. Then you mix them up with some roasted garlic and the like, throwing in chopped white onion and cilantro at the end. I feel like salsa is a bit like homemade salad-dressing, it seems overwhelming to make it happen, but when you do take the time you realize it wasn't that hard and the results were so easy!

We used half of this in a pipian later that week and gobbled the rest up with our friends Mark and Dahlia whilst having a strategic deck-planning session. Mark heartily approved, and if a boy from the Central Valley doesn't know good salsa, I don't know who would!
